COLORED HANDS BUTTONS

These hand buttons are really silly, simple little things, but I thought they would be terrific for those kids layouts, where they are finger painting etc!

My SMARTER Spanakopita

Miles gave me the hugest compliment yesterday – at school, he called me his personal “Jenny Craig” - now I don't know her – never been on her program, and neither has he, I can assure you, but he was actually bragging that I meet all his nutritional needs and provide gourmet, low-fat meals for him. In fact, this was before he came home to find that I had prepared my own version of Spanikopita – a much, much lighter version than the usual one. I love working with phyllo pastry. Its delicate but forgiving. It looks fancy. Sprayed with no-fat cooking spray it makes a nice crunch surrounding some healthy filling. Let me know if you would like my recipe!

For dessert, I tried the Pumpkin Spice Cake which was submitted to my blog a few weeks ago by Kerie. I turned out totally yum and Miles was allowed to have a nice small slice of it, garnished with a tablespoon of low fat cool whip and a drizzle of chocolate sauce. He weighed in at the gym yesterday and has found he has lost another pound, so he's a happy man.

Today, because I will be short on time during the supper hour, I will prepare dinner ahead, which we can eat hot or cold. We will have a grilled chicken and snowpea toss with oriental noodles. Will serve that up to you on my blog tomorrow!

Many of you requested my recipe for healty wraps - so here you are. Even though they do contain tomato and cucumber, I still freeze them - they seem to be really nice. I pop them in the microwave before I serve them so they make a satisfying lunch even on a cold day!


BARB'S HEALTHY WRAPS


I package Dempsters white made with whole grain tortillas


3 cups cooked brown rice

2 cups canned black beans (rinsed)

1 cup chopped green pepper

1 cup chopped mushrooms

½ cup chopped cilantro

½ cup chopped tomato

½ cup chopped cucumber

1 cup low fat cheese or a good sprinkle of parmesan

½ tsp cumin

5 tablespoons prepared salsa

squeeze fresh lime juice

lotsa pepper ( I'm addicted )

fresh ground sea salt, to taste


Mix all ingredients together in a large bowl. Fill each wrap and roll up. This should use up at least 9 of the rolls if you put about 2/3 to ¾ cup in each.


Makes 10 or more.


I spent an enjoyable morning with my friend Rose, and Theresa in Rose's Painting Studio. While they had the luxury of 'inspired' painting – I attempted to layout a family tree on a huge slice of paper. This was a project given to me by a friend who asked me to pull it together off of an old one that had many names added to it over the years. Yesterday convinced me that its an impossible task to try and do something by hand. I also attempted to build it in Photdoshop, but after entering several hundred names in I had to come to the conclusion that would not work either. Soooooo.... anyone know any really nice, easy to use genealogy software? I would love some help on this one!

    I'd like a copy of your Spanikopitos Recipe please.
    I am in a hurry today but wanted to mention I saw a dietician yesterday & she shocked me by telling me that oriental noodles are fried & full of salt, that baked ones are better but cost more. For oriental noodle soups she recommended Chef Woo. They are baked & fat free. She said to check the labels on noodles. Thought I'd pass it on & thank you for your tips, recipes & downloads.

  9. yum, i love your site, not only for the recipes, but for the fun stuff you put on here. i love your shares and things you make. Thanks for putting my LO up, that is fun, my son, Scott, will freak when i show him!! i will have a look at what LOs i have done that you might like to look at regarding where i live and get back to you. I am just about to do some LOs of my town and so i will use some of your stuff in them and get back to you when i have done it.
    in the mean time you might like to look at the website a friend and i put together for our tourist centre where i work one day a weekend. i did a booklet some years ago and converted it to a website, updated photos etc. some great photos there if you have time to look through. i guess you will be able to take some off there. the shearing photos are mostly my son and his shearing mate, Darren. my hubbie Kevin, is rouseabout, with the broom in one photo. we live one street back from the jetty on the home page, but while we can see the sea, our view of the jetty itself is just blocked out. we also have a farm, but i try to spend more time in my ceduna house, as thirty odd yrs on the farm is enough for me!!!
